This week we are making soup for French Fridays with Dorie. Provencal Vegetable Soup to be exact. I’m guessing that our Doristas who are cooking a little closer to the equator are not so amused. In fact, you probably will not be surprised to hear that it was picked by one of our Canadian Doristas, Theresa, over at One Wet Foot.
I actually made this one a week early. And thank goodness because this past weekend the temps shot up and the only place in my kitchen where any food prep was happening was in the fridge. Okay, I know that temperature is all relative and I know that some of my fellow Doristas live in climates which make a German summer seem downright brisk. But I was melting. Luckily the temps are back down and giving the two overworked fans in my apartment a well deserved breather.
By now you might be wondering, what about the soup! Well, the soup was delicious. I know, the picture makes it look a bit healthy. And it is. But also delicious. Really. So much flavor packed in there

Hey it gets MIGHTY hot in Canada too you know (hotter there today than here in Paris!) but I liked this on a chilly “summer” day as well as a warmer one. I guess I am weird. But I loved how “healthy” it feels 🙂

The temps here in NJ are in the high 80’s with high humidity…definitely not soup weather! However, a Dorista does what she needs to do! The soup was delicious and I really enjoyed it! Yours looks mouthwatering! Happy Friday!

You are so right about the flavors of this soup. I was surprised by how tasty it was. We were having (too) hot weather this week, so it wasn’t quite as appealing the first night when it was hot and humid, but I had it for lunch on a cooler day too and it hit the spot. I hope it’s cooled off in Germany to give both you and your fans a rest.
I know I’m in the minority, but I’ve never minded eating soup in hot weather. This was definitely a pleasant surprise.

Yes, it’s surprising that something that is really and truly so nutritious is so delicious. It got about a 100% approval rating from the Doristas. I always feel a little guilty about choosing recipes that don’t work for everyone. This should make you feel better – Candy made the soup and it’s 117 degrees in Arizona. I understand the European weather has been “difficult” this Summer. Hope you are getting settled.

The whole healthy thing was an added bonus.
It was actually pretty hot that week here, too, if I recall correctly. But, I do live in the mildest zone in Canada (summers, as well as winters), so I guess it was a bit awful of me to pick this one. It was just so full of summer vegetables, I couldn’t resist.
I finally posted about this one and it’s making me think that it could easily adapt to winter vegetables, too. Year-round soup is very appealing to those of us in rainy Vancouver…
