This week’s French Fridays with Dorie recipe was an easy one, Creamy Cauliflower Soup, Sans Cream. Saute some onions, boil some cauliflower, give it a whir in the blender, apply topping of choice, dinner is served.
I topped mine with a few drops of truffle oil and paired it with cheese toast and tomatoes (because this dish was screaming out for a little color!). It was the perfect interlude to the holiday feasting season.
This dish absolutley needed some color – cheese toast and tomato sounds like a really good lunch idea right now…

I agree…this dish needed color and something with some good flavor. This soup is like a base wanting something more. You have a great idea.

Rose, sounds like you really enjoyed the Cauliflower Soup and to pair it with fresh bread, cheese and tomatoes sounds like a wonderful idea – soup and sandwich, real comfort food (especially when it is snowing so much today)!

Cheese toast and tomatoes. I think it is the perfect combo with the rather plain and simple cauliflower soup. And, when I have leftover soup for lunch tomorrow, I might do just that. You’re right, this is a silky and smooth white soup – rather plain in color. I used walnut oil/toasted walnuts but your truffle oil certainly intriques me.
Perfect with cheese and tomato sandwiches. Looks great. We loved the soup and I will certainly do this again. No guilt to worry about.

Great accompaniment, Rose! I love cheese toast with tomato soup but never thought to pair it with this one. I have leftovers, so I get another chance!
The brightness of the tomatoes looks lovely beside that soup. I agree that it’s a great antidote for all the rich foods at this time of year.
