creamy cauliflower soup, sans cream

This week’s French Fridays with Dorie recipe was an easy one, Creamy Cauliflower Soup, Sans Cream. Saute some onions, boil some cauliflower, give it a whir in the blender, apply topping of choice, dinner is served.

I topped mine with a few drops of truffle oil and paired it with cheese toast and tomatoes (because this dish was screaming out for a little color!). It was the perfect interlude to the holiday feasting season.

    I think you are right – this soup was the perfect interlude in the holiday feasting season. Something I could eat without thinking about the calorie count! Wish I had some truffle oil; I bet that was good!

    Cheese toast and tomatoes. I think it is the perfect combo with the rather plain and simple cauliflower soup. And, when I have leftover soup for lunch tomorrow, I might do just that. You’re right, this is a silky and smooth white soup – rather plain in color. I used walnut oil/toasted walnuts but your truffle oil certainly intriques me.

    The brightness of the tomatoes looks lovely beside that soup. I agree that it’s a great antidote for all the rich foods at this time of year.
